The invention concerns a method of taking samples from the chamber of an extruder, the method calling for a sampling channel (3), which runs from the extruder chamber (2) through the extruder housing or housing module (1) to the outside, to be opened by pushing a shaped closure piston (4) back along the axis of the sampling channel so that a sample (7) of the product in the chamber (2) is pushed through an aperture (8) in the chamber wall and into the sampling channel (3). The sample (7) is then pushed out of the sampling channel (3) by an ejector piston (6) which is mounted to move in a sample-ejector channel (5) which intersects the sampling channel (3).
