PROBLEM TO BE SOLVED: To produce an emulsion, excellent in thermal stability and self emulsifiability by grinding the fruit core in water, preparing an aqueous dispersion, carrying out extraction with water, separating an insoluble substance, isolating a fraction rich in proteins and/or lipids from the aqueous extract, homogenizing the fraction and sterilizing the resultant homogenate. SOLUTION: A fruit core freed of a skin such as an apricot core is ground in water as 10-35 deg.C and (1/12)-(1/3) weight ratio to provide an aqueous dispersion. Extraction thereof with water is then carried out at 10-50 deg.C and pH 5-11 for 1-5hr to separate an insoluble substance. A fraction rich in proteins and/or lipids is subsequently precipitated at 10-50 deg.C and pH 3-5 and isolated to separate the supernatant. The isolated fraction is then homogenized and sterilized. |
