PURPOSE: To provide the subject new oligosaccharide producible by reacting a solution containing 2-deoxyglucose with a glucoamylase, etc., resistant to acid fermentation, free from the action to cause dental caries and useful in the field of food industry, cosmetic industry, pharmaceutical industry, etc. CONSTITUTION: This new 2-deoxyglucooligosaccharide is expressed by formulas I to III and contains two or more 2-deoxyglucose units bonded through O- glucosyl bond. The oligosaccharide has high hygroscopicity and is effective for imparting body feeling, resistant to acid fermentation, free from the action to cause dental caries and useful in the field of food industry, cosmetic industry, pharmaceutical industry, etc. The oligosaccharide is produced by dissolving 2-deoxyglucose in 20mM acetic acid buffer solution (pH4.4), adding a glucoamylase or anα-glucosidase originated from Aspergillus niger, reacting at 40-70 deg.C for 10-50hr, thermally deactivating the enzyme and fractionating the reaction product by preparative high-performance liquid chromatography.
