FIELD: milk industry, may be used in farms. SUBSTANCE: apparatus has casing 1 with water jacket 2, heat insulation 3, covers 20 and 21, cart 17 with basket 4 for collecting and self-pressing curd, replacement device with system including tray 9, pump 13, valves 16 and 28, bladed mixer 23 with openings 27 and scraper 25. Ratio of open surface area of apparatus and volume of apparatus is 0.5-1.0. Bladed mixer and scraper are adapted to discharge sour cream from surface of settled sour milk. EFFECT: increased efficiency, versatility of construction and enhanced reliability in operation. |
