PROCESS FOR THE HYDROLYSIS OF THE TRIGLYCERIDES OF POLYUNSATURATED FATTY ACIDS

In order to prepare a mixture of polyunsaturated fatty acids with an optimum quality, an oil rich in polyunsaturated fatty acids is hydrolysed by a non stereospecific lipase from Candida cylindracea in an oilin-water medium emulsified in the presence of lecithin as an emulsifying agent and under operating conditions preferably at room temperature and in an aqueous medium buffered to a pH close to neutral.
