Apparatus for use in bread baking comprises a lightweight pan and a complementary protective carrier for the pan. The pan is provided with lengthwise extending edge flanges adapted to enter complementary recesses at the edges of the carrier to interconnect same and protect user from injury by the pan edges. The carrier is constructed so as to eliminate the provision of an air zone defined between the base of the pan and a corresponding face of the carrier. In one embodiment the carrier is a wire fabrication. In another embodiment the carrier has a base plate in face-to-face contact with the base of the pan. <IMAGE>
