The process comprises the stages of roasting, peeling and docking (cutting the tail from) the fruit. Before the roasting stage, the fruits are subjected to a preheating operation, by means of immersion in an oil bath. The installation comprises a loading table 1 composed of a chain of scoops which are dimensioned so as to receive one fruit each, a conveyor chain 2 which includes clamps articulated to the chain links, a preheating bath 3, a roasting tunnel 4, a peeling unit 5 composed of at least one pair of friction-producing rollers, and a docking device which includes a cutting station 6 and a pair of reacting rollers 7. <IMAGE> |
