During the post-production treatment and packaging phases, units of hard cheese are moved to and from equipment for further processing and are manipulated by supporting elements. The novelty is that the manipulating elements are formed by bristles (3; 3') as part of a lifting and lowering assembly which is positioned below and/or above the pieces of cheese (1). The cheese (1) is transported by a laterally-moving brush assembly (4; 4'). The cheeses are raised and lowed relative to the brushes by a gang of rods (2). The cheeses are moved sideways by rod motion (2).
