<p>The oven has an inner chamber (6) to receive the food to be cooked, and an external wall (2) forming the exterior of the oven. A fume collection area (8) occupies part of the space between the cooking chamber and the external wall. A passage (7) connects the interior of the cooking chamber to the fume collection area. The passage houses a block of a catalytic material (28). A sensor (30) responsive to temperature or composition of the fumes is placed beyond the catalyst in the collection area. The sensor controls operation of a fan (13) that blows air through the fume collection area, aiding transport of the fumes to the outlet (14) at the front of the oven, and increasing rate of drawing of fumes through catalyst.</p> |
