DIETARY FIBER ORIGINATED FROM RICE AND ITS PRODUCTION

PURPOSE:To obtain dietary fiber from brewery lees of SAKE (Japanese rice wine) and obtain a process for the production of the dietary fiber. CONSTITUTION:This process for the production of-dietary fiber is characterized by the enzymatic decomposition treatment of the brewery lees of SAKE in the presence of at least protease, nuclease, lytic enzyme and amylase, the separation of the enzymatic decomposition product into aqueous solution and insoluble residue by filtration or centrifugal separation and the washing and drying of the insoluble residue. This dietary fiber is composed of nondigestible and insoluble residue obtained by removing digestible component and water-soluble component from the enzymatic decomposition product of a brewery lees of SAKE.
