PURPOSE:To provide a method for producing frozen Hypsizygusm armoreus giving preferable flavor and palate feel, capable of preventing the mushroom from browning during its preservation in a frozen state or its thawing. CONSTITUTION:In freezing the basidiocarps of Hypsizygusm armoreus obtained by artificial culture, the basidiocarps are steamed, rapidly frozen and then frozen. |
