PURPOSE:To mince meat in stringy low-class part without entwining string of meat round a plate, etc., of a mincing machine and obtain minced meat free from feeling of foreign matter and having ideal texture using meat treated with a protease. CONSTITUTION:Meat is made to react with a protease [preferably esterase derived from alkalophilic Bacillus sp. Ya-B strain (FERM-P-12261), etc.] and treated by a mincing machine. The protease is preferably used in an amount of 1000-2500 unit based on 100g meat. |
