In a device for detecting defects in filets of fish, the filets are placed on a translucent surface which is sealed to a parabolic mirror. A light source is located at the focus of the mirror. The surface, mirror and light source make up a stationary or rotating illuminating table unit. This unit is mounted on hollow cylinder supported on a shaft which supports the light source and contains the power supply leads. An opening in the centre of the table and is covered by a water-tight hemispherical flange which has a light-reflecting internal surface. Depending on the direction of rotation of the table, a trimming work-station is located in its first or fourth quadrant and is provided with an exchangable translucent work plate locted above the table.
