PURPOSE:To obtain the white title rice reduced in solidification and excellent in solubility by irradiating steamed rice with high frequency wave from the side face of steamed rice receiving cylinder consisting of a high-frequency permeable material in a closed cylindrical drier body to generate heat and drying the steamed rice by subjecting the evaporated water content to vacuum sucking. CONSTITUTION:When steamed rice is continuously charged into a steamed rice receiving cylinder 5 provided in a closed cylindrical drier body 3 and taken out, the steamed rice is irradiated with high-frequency wave from the side face of the above-mentioned steamed rice receiving cylinder 5 consisting of a high-frequency permeable material to generate heat and dried by subjecting evaporating water content to vacuum sucking to provide gelatinized rice for sake brewing. The above-mentioned method reduces solidification of steamed rice during drying, provides white gelatinized rice free from deterioration of sweet smell and suitable to mass production and most suitable for sake brewing. |
