PURPOSE:To obtain an agent for providing durable fragrance and flavor or a modifier usable in various fields, comprising 2,2-dimethyl-5-phenyl-2(H)-3- furanone as an active ingredient. CONSTITUTION:A perfume composition which has coumarin-like base tone, dried grass-like fragrance and flavor characteristics with slight green feeling and excellent durable fragrance and flavor characteristics and contains a compound shown by the formula as an active ingredient. The amount of the compound shown by the formula is 0.001-30wt.% in the perfume composition and the composition is usable in wide fields such as food and drink (including table luxuries), cosmetics, healthy and sanitary articles and drugs. |
