Hydrostatic steriliser equipment comprises the following:-interconnected vessels are located near each other. Produce for sterilisation is passed through these vessels in a vertical zig-zag motion. Steam spaces are formed between neighbouring vessels and the pressure in these spaces increases in steps from atmospheric to the saturation pressure corresponding to the sterilising temperature. - The vessel (M1) with the lowest pressure is connected to the suction side of a pump (6) which discharges into vessel (M2) at a higher pressure.
