PURPOSE:To obtain the titled banana molasses having high quality and low calcium ion content, by mixing slaked lime to the sugar syrup extracted from banana, pressing and centrifuging the mixture, heating the produced sugar syrup, and removing the precipitated insoluble dreg. CONSTITUTION:Green-ripe banana is ripened, cut to small pieces, added with water of an amount nearly equal to that of water evaporated during the ripening process, mixed and kneaded, ans subjected to the pressing, etc. Insoluble materials are removed from the product to obtain a sugar syrup. The sugar syrup is added with slaked lime to an amount of obtain a neutral or slightly acidic mixture, which is pressed or centrifuged e.g. by screw press, etc. The obtained syrup is heated at >=60 deg.C, and the precipitated insoluble dreg is separated and removed to obtain the objective banana molasses. |
