PROBLEM TO BE SOLVED: To obtain a new disaccharide having more refreshed sweetness than sugar, leaving no aftertaste, useful in the field of foods, medicines, etc., as a noncaloric sweetener, etc., comprising 1-O-α-D-fructofuranosyl-D-fructose. SOLUTION: This new disaccharide comprises 1-O-α-D-fructofuranosyl-D- fructose (αFF) of the formula, has more refreshed sweetness than sugar, characteristics of no remaining aftertaste, is a homobiose of fructose having no calorie or calorie close to approximately to zero, suitable as an active ingredient for a sweetener useful in the field of foods and medicines. The compound is obtained by treating di-α-D-fructorfuranose 1, 2':2, 1' dianhydride (α-DFA) with an enzyme for hydrolyzing one α1, 2 fructofuranoside bond of α-DFA. |
