PURPOSE:To reduce unpleasant taste components, by squeezing raw soybean seeds free of skin and hypocotyl at a specific temperature and treating the resultant soybean milk with Duolite resin. CONSTITUTION:Raw soybean seeds free of skin and hypocotyl are extracted at <=60 deg.C to prepare soybean milk with a low extraction ratio of glycoside components by squeezing. The resultant soybean milk is then passed through a column filled with Duolite resin to remove the soybean glycoside components until unpleasant taste, e.g. bitter taste, astringency, etc. is not felt, The soybean food with eliminated unpleasant taste peculiar to the soybean can be widely utilized for various processed foods. |
