"Module" permitting the storage, preservation and handling of a mass A of grapes, grape juice, must, and a mass B of wine, which masses are isolated from each other, the module being composed of: - a smooth (asperity-free), isothermal inner vessel 1 based on a sphere or volumetric shapes stemming therefrom, - a closure system 10 and 11 rendering it hermetically closed and sealed, and isolating the masses A and B contained from the atmospheric and environmental conditions, these masses being separated from each other by means of a grid 2, - a system for applying a vacuum which is adjustable, variable and controllable, composed of a vacuum pump 15 controlled by a vacuum switch (vacustat) 15, - spindles 8 and 8' on the module enabling it to be handled and transported on a cradle, or which fit together on a gripping system 9 for handling and positioning the module in space, and which enable the masses A and B contained to be loaded and poured out, directly by gravity, via the upper opening 4 and the lower valve 6. The use of this module involves processes, under controlled vacuum and without trituration of grape harvest, for gravity pressurising, for vinifying the musts and for stabilising the wines, by mastering the biochemical phenomena such as maceration and fermentations due to oxidation in air. <IMAGE>
