PURPOSE:To keep freshness of shellfishes, arthropods and mollusks and to make their preservation possible in a stable state of quality, by dehydrating them with a hot oil as a heating medium under reduced pressure while stirring. CONSTITUTION:An animal oil or vegetable oil in a sealed container is preheated to >=about 150 deg.C and shellfishes such as scallops, ear shells, etc., arthropods such as prawns, etc., or mollusks such as octopuses, cuttlefishes, etc., are fed to it. Then, the shellfishes, etc., are heated by reducing the pressure slightly at first and then extremely while keeping the oil at >=150 deg.C and stirring. The pressure in the container is returned to normal pressure and the shellfishes, etc., are taken out. |
