<p>PURPOSE:To obtain wine free from musty smell, by inoculating a fungus belonging to the genus Saccharomyces, having a specific value of a ratio of growth ratio in an alcohol-containing medium to one in a medium containing no alcohol and relatively high alcohol resistance, to grape juice and cultivating the fungus. CONSTITUTION:A fungus [e.g., Saccharomyces cerevisiae (FERM P-8410), etc.,] belonging the genus Saccharomyces, having >=9% ratio of a growth ratio in a medium containing an alcohol (10V/V%) to one in a medium containing no alcohol, is inoculated into grape juice and the fungus is cultivated, to give the aimed wine. A fungus having lactose and D-xylose fermenting properties and assimilating properte is on lactose, D-xylose, L-rhamnose and L-arabinose is preferable as the fungus.</p> |
