PURPOSE:To provide a food additive capable of imparting Japanese cake, Western cake, bread, etc., with softness and luster, by mixing glycerol with hydrolyzed reduced starch and a liquid sugar. CONSTITUTION:The objective food additive can be produced by mixing glycerol, a hydrolyzed reduced starch, a liquid sugar and if necessary D-xylose, and stirring the mixture to obtain a homogeneous composition. The additive is added to cakes, rice cakes, bread, etc., at a rate of about 3-5wt% based on the raw material of the cake, etc. |
