PURPOSE:To prepare a pickling bed which can provide a sweet pickled vegetables in one night, by heating and fermenting a mixture of boiled rice and ''koji'' (malted race), adding salt to the resulting liquid like to ''ama-sake'' (a sweet drink made from fermented rice), and packaging the mixture in a gadget bag with a slide fastener after heat-sterilization. CONSTITUTION:Rice is boiled into gruel, mixed with ''koji'', and heated at the fermentation temperatue to obtain a liquid like to ''ama-sake''. Salt is added to the liquid to form a mixture of salt (3pts.), rice (5pts.), and ''koji'' (8pts.). The mixture is heat-sterilized and put into a gadget bag with a slide fastener. Vegetables pickled in ''koji'' and having sweet taste can be obtained in one night, by putting vegetables such as eggplant, cucumber, turnip, radish, Chinese cabbage, etc. in the bag. |
