PURPOSE:To prepare a fish paste product containing fish eggs, by filling a fish paste in the respective cavities of a split mold, by inserting salted fish eggs between the paste, and by gelatinizing the paste in the closed molds with heat. CONSTITUTION:Fish paste is filled into the cavities having the shapes of respective fishes, e.g. ayu or sea bream, of a splittable mold, and salted eggs, e.g. walleye pollak, smelt, or lizard fish, are inserted between the paste. The mold is then closed and gelatinized at 40-50 deg.C for 20-30min or immediately heated by steaming or roasting at about 85-100 deg.C. The paste product is then taken out by opening the mold. |
