<p>Liq. is pumped through a receiver to a set of hollow needles which are reciprocated to be first inserted into and then withdrawn from the heat. The needle speed is varied w.r.t. the meat. During part of the time for which needles are inserted in the meat, fluid is injected by the pump via receiver and needles. The rate of discharge of fluid through the needles is directly proportional to the speed of displacement of needles w.r.t. the meat. For any speed of displacement the rate of delivery of fluid via the needles is adjustable. Fluid injection should not start until the insertion of needles has started and injection should cease before needles are withdrawn. The speed of needle displacement is pref. max. at mid-displacement on the entry and withdrawal strokes. Used for injecting brine, etc. into meat, ham, bacon, uniform and controlled, distribution of brine, etc. into the heat. The rate of fluid injection is made directly proportional to the speed of needle displacement.</p> |
