<p>Prepn. of aq. mushroom extract comprises chopping mushrooms with an equal weight of H2O, macerating in hot H2O pressing and filtering. The clear liq. obtd. is bottled and sterilised at 120 degrees C for 30 mins. Maceration is pref. at 40-50 degrees C for 5 mins. or 90 degrees C for 2 mins. The process is esp. suitable for cultivated mushrooms. The extract cam be stored for a year or more and retains its flavour.</p> |
