摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing fish soy having less smell and richer flavor than conventional fish soy produced by using fish and shellfish as raw material, and to provide fish soy obtained by the method. <P>SOLUTION: The method for producing fish soy comprises fermenting and aging Moromi obtained by admixing fish roe and rice malt to saline solution, squeezing the aged Moromi and purifying the squeezed Moromi, wherein dry rice malt for soy is put into saline solution prepared by filling a container with water and charging salt into the water while stirring; minced fish roe is put into the saline solution; the mixture is stirred well again after charging the raw materials; thereafter the mixture is fermented, aged, and filtered after aged; the filtered solution is subjected to firing at 85&deg;C; and lees are filtered after firing. <P>COPYRIGHT: (C)2009,JPO&INPIT
