PROBLEM TO BE SOLVED: To provide a seasoning containing acetic acid which improves the taste persistence and palatability of food and drink added with the seasoning containing acetic acid, a method for improving taste persistence and palatability, a method for masking unpleasant smell and unpleasant taste, a method for enhancing sweetness and deliciousness, a method for improving the texture of cooked rice, and a method for producing cooked rice improved in texture.SOLUTION: The seasoning containing acetic acid contains 10-300 ppm of isoamyl alcohol and 10-150 ppm of ethyl acetate. |
