FIELD: chemistry.SUBSTANCE: method of according to present invention is a method of extracting proteoglycan of fish cartilage, including step (A) of heating small parts of frozen fish cartilage in water. Disclosed method enables simple extraction of proteoglycan of fish cartilage with very high efficiency. Method according to present invention enables extraction of high-molecular proteoglycan. Furthermore, since in method for extraction according to present invention, extraction is carried out using only water, it ensures safety of extraction and safety of obtained proteoglycan product in comparison with known until now methods for extraction using organic solvents or acids/alkali.
