PURPOSE: A kimchi preparation method using buck wheat shoot crude liquid and optionally buck wheat shoot is provided, thereby improving nutrition, taste, and texture sense of kimchi and increasing the freshness period of kimchi. CONSTITUTION: The kimchi preparation method using buck wheat shoot crude liquid and optionally buck wheat shoot comprises the steps of: coating the salted Chinese cabbages with buck wheat shoot crude liquid; and adding buck wheat shoot crude liquid and optionally buck wheat shoot into kimchi dressing, and inserting the kimchi dressing into the buck wheat shoot crude liquid coated, salted Chinese cabbages.
