A ramyeon contg. fish meat is prepd. by (a) mixing 60 % fish meat, 30-35 % wheat flour, 2-3 % edible salt, 1 % emulsifier, 0.1 % alkalifying agent, 5 % egg white and 0.5-0.9 % condiment, (b) re- mixing the mixt. with 20-30 % water, (c) forming the re-mixt. to sheet type and roasting, (d) drying the roasted re-mixt., (e) frying it for 30-60 sec. in 90-100 deg.C vegetable oil, and (f) cooling it and cutting to obtain the final product. The obtd. ramyeon has a good taste. |
