The present invention relates to a manufacturing method of abalone aged by using autolysin; and to abalone manufactured thereby. The present invention relates to a method for reducing the peculiar fishy smell of abalone by controlling microbes which contaminate the surface of abalone and can propagate; and to a method for manufacturing aged abalone by using autolysin included in the fleshy tissue of abalone. More specifically, the present invention relates to a method for manufacturing abalone and to a product manufactured thereby, wherein the method prevents the proliferation of saprophytic bacteria in abalone to control the fishy smell of the abalone by: manufacturing a citric acid solution with an adjusted pH value by using citric acid, which is harmless to the human body, is well used for a food additive, and has an excellent sterilizing effect; and soaking the abalone in the citric acid solution for a fixed period of time. Also, the method manufactures abalone with softened flesh and the increased amount of taste compounds by activating autolysin included in the fleshy tissue of the abalone under optimal conditions. |
