The present invention relates to a composition for manufacturing a gluten-free sweet potato-shaped rice cake baked snack and a manufacturing method thereof. The composition includes: 70 to 200 parts by weight of rice powder; 20 to 120 parts by weight of an egg; 10 to 60 parts by weight of water; 10 to 100 parts by weight of sugar; 1 to 10 parts by weight of mixed oil and fat; 1 to 30 parts by weight of grain fermented liquid; 10 to 60 parts by weight of milk; 0.1 to 5 parts by weight of an emulsifier; and 2 to 10 parts by weight of a sweet potato sediment. The composition has an excellent organoleptic effect in comparison with a flour backed snack, and can reduce the amount of added sugar material such as sugar or the like and fat, thereby showing an excellent effect as a dietary cake for well-being from a nutritional perspective. The composition can be very usefully used for a well-being health food industry and an agricultural processed food industry since the composition is very beneficial as gluten-free food for a western patient having a celiac disease or an atopic patient as well as not causing a wheat allergy as not including wheat. |
