摘要 PROBLEM TO BE SOLVED: To provide a preservation method for fresh seafood killed in a fish tank, capable of being easily realized.SOLUTION: A freshness keeping method includes: whipping with a whipping utensil a preservation liquid added with a thickener and then alginate sodium, mixed with potassium ion and sodium ion at a mol ratio of 2/1, and prepared in an osmotic pressure of nearly 320 mosm/L; covering the surface of Japanese horse mackerel with the foam; installing a resin net spacer between a container and the Japanese horse mackerel followed by storing it in the container; and preserving the product at 4°C so as to keep freshness just after killing in a fish tank for 10 days.
