摘要 <P>PROBLEM TO BE SOLVED: To provide high-quality turmeric for further many people by removing the characteristic bitter taste and smell of turmeric without complicated various steps while enhancing the active ingredients of turmeric, thereby facilitating the intake of the turmeric. <P>SOLUTION: The method for producing fermented turmeric powder includes the steps of: (a) sterilizing a mixture obtained by mixing turmeric powder and water; (b) inoculating Aspergillus kawachi and Rhizopus oryzae to the mixture sterilized in the step (a) followed by fermenting; and (c) drying the mixture fermented in the step (b).
