KETOSE 3-EPIMERASE PRODUCED BY ARTHROBACTER GLOBIFORMIS

[Problem] To provide a method for producing an epimerase and a ketose both of which are highly safe and can be used in a food industry. [Solution] Ketose 3-epimerase which can be produced by a microorganism belonging to the genus Arthrobacter and has substrate specificities as mentioned below to the amino acid sequence represented by SEQ ID NO: 1 shown in the Sequence Listing: (1) the ketose 3-epimerase can epimerize position-3 in a D- or L-ketose to produce a corresponding D- or L-ketose; and (2) the ketose 3-epimerase has the highest substrate specificity to D-fructose and D-psicose among D- and L-ketoses. Ketose 3-epimerase which can epimerize position-3 in a D- or L-ketose represented by SEQ ID NO: 3 or SEQ ID NO: 4 shown in the Sequence Listing to produce a corresponding D- or L-ketose.
