PROBLEM TO BE SOLVED: To provide a process for producing an oil, or a polyunsaturated fatty acid (PUFA).SOLUTION: A process for producing an oil, or a polyunsaturated fatty acid (PUFA), is described where an aqueous liquid (fermentation broth) comprising cells is deaerated, and the oil or PUFA is obtained from the cells after the cells are heated or pasteurised. Deaeration can be performed by techniques including the application of a vacuum or reduced pressure, the application of mechanical deaeration or degassing, changing viscosity by dilution or heating, changing fermentation conditions, changing the pH, filtration, gas displacement or chemical deaeration. The cells are yeast, fungi, bacteria or algae cells, and the PUFA contains C20 or C22, C22 &OHgr;-3 or &OHgr;-6 PUFA. Specifically the cells are Crypthecodinium cohnii or Mortierella alpine, and the PUFA is docosahexaenoic acid (DHA) or arachidonic acid. |
