The invention relates to a method for separating the surfactants present in the washing liquors of corn, based on extraction with organic solvents. Furthermore, once the biosurfactants have been extracted from the corn washing liquors, the nutritional capacity of said corn washing liquors is evaluated using lactic bacteria, making sure that the nutritional capacity is maintained.
