The present invention provides a novel amino acid derivative, or a salt form thereof represented by formula (1): (see formula 1) wherein R1 and R2 are as defined herein and R3, represent a substitutent represented by formula (2) (see formula 2) wherein R a to R e are as defined herein. The present invention further provides a sweetening agent and a food or beverage, which contains the novel amino acid derivative of the present invention to increase the sweetness of the same.
