TEA EXTRACT, TEA DRINK, AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a method for producing a tea extract containing flavor and full body taste components at high concentration with a reduced content of bitter and astringent components.

SOLUTION: The method for producing the tea extract includes: a step 1 for removing at least part of catechins of tea leaves; and a step 2 for obtaining an enzymatic extract liquid by enzymatic extraction of tea leaves from which catechins are removed, wherein the tea extract containing amino acids at high concentration is produced. The step for removing catechins is for removing a high-temperature extract liquid extracted with an aqueous solvent at 60°C or higher. The method further includes a step 3 for obtaining a tea extract with a high content of theanine by blending theanine in the enzymatic extract liquid.
