<P>PROBLEM TO BE SOLVED: To provide foaming oil-in-water-type acidic emulsified substance having favorable acidity and natural and rich milk flavor, smooth palate feeling after foamed, and excellent in various properties such as shape retainability and syneresis resistance. <P>SOLUTION: The foaming oil-in-water-type acidic emulsified substance contains oil and fat, lactic acid fermented substance and egg yolk oil, wherein the oil and fat account for 20-50 wt.%; the lactic acid fermented substance accounts for 3-50 wt.%, and milk protein accounts for 1-15 wt.%. <P>COPYRIGHT: (C)2008,JPO&INPIT |
