The present invention refers to a chiltepin chile sauce and an industrial process for the manufacture of chiltepin chile sauce, which includes the following ingredients: chiltepin chilli pepper, chicken stock, milled black pepper in powder, milled coarse salt, garlic, lime, said ingredients providing a flavour and texture such as those of the best home-made sauces, as well as stability during long periods of time, and the ability of bonding, thickening and providing consistency or texture to the sauce (cohesion), with a pH (acidity or salinity) suitable for acquiring a characteristic flavour different from those of other sauces intended to be made by the same or equal process, which is packed and commercialised; the manufacturing process comprises preparing the sauce by separate in a simultaneous or sequential manner, regardless of the order: smashing the garlic without skin from 15 to 20 min, then frying the garlic at 180°C approximately, introducing into a proper container the cooke d and almost gold-coloured chiltepin chile along with the garlic, frying them for 10 to 15 min approximately at a temperature of 180°C, the chicken stock being added after frying the previous ingredients so as to form a homogeneous mixture, which is constantly stirred for avoiding lumps; the mixture is cooked for 5 minutes approximately at the same temperature (180°C), the milled coarse salt in powder being added and the mixture stirred for avoiding lumps, the lime juice being subsequently added at the same temperature and the mixture being constantly stirred for preventing the same from being adhered to the container during the whole process until it is brought to a boiling point; the sauce is then cooled at bain-marie with ice until the temperature is abruptly reduced down to 5.5°C approximately; the sauce is degreased, thus obtaining a homogeneous dispersion which is finally packed in glass containers of from about 150 mm to about 200 mm approximately, the glass containers being in troduced into boxes of 12 to 25 containers without being covered and labelled. |
