PURPOSE: A method for manufacturing Rubus coreanus beer is provided to maintain the freshness and alcohol content of conventional beer and to manufacture a new type of Rubus coreanus beer. CONSTITUTION: A method for manufacturing Rubus coreanus beer comprises: a step of juicing Rubus coreanus fruit to obtain Rubus coreanus juice; a step of drying the residual peel and seed of the Rubus coreanus fruit and pulverizing the dried materials; a step of saccharifying malt with a saccharifying enzyme for 30 minutes to three hours; a step of mixing the Rubus coreanus powder and saccharified liquid and boiling for 10 minutes to three hours to obtain wort; a step of precipitating the wort; a step of fermenting the wort with yeast; a step of maturing the fermented liquid; and a step of adding 3-15%(v/v) of Rubus coreanus juice.
