The method involves adjusting movements and positions of an extracting device (1) based on dimensions of an animal (2). The foreleg skin of the animal is inserted to clamps of the device, an extracting cycle is triggered. A curvilinear path is followed by the clamps, where the path is oriented in elevation along shoulders of an animal and has concavity turned posteriorly along a longitudinal direction (Y). Another contiguous curvilinear path is followed by the clamps, where the contiguous path is oriented longitudinally along a back of the animal and has concavity turned towards the device. An independent claim is also included for a device for picking a skin of a quadruped animal in a butcher shop.
