<P>PROBLEM TO BE SOLVED: To provide an improver for Sekihan, capable of making the color of the Sekihan bright by being added to the Sekihan at coloring, and to provide a method for producing the Sekihan. <P>SOLUTION: The improver for the Sekihan contains a polyphenol-oxidizing enzyme, or contains a mixture obtained by combining the polyphenol-oxidizing enzyme as an essential component, with one or more kinds of components selected from other polysaccharides, fibrous foods, soybean-associated material, starch, sugar, sugar alcohol, sweetener, milk product, protein, oil and fat, enzyme, vitamin, emulsifier, food material, agent for production, potency regulator, pH regulator, pungent agent, antioxidant, enhancer, leavening agent, flavoring agent, coloring agent, preservative and seasoning.
