PROBLEM TO BE SOLVED: To provide a bookbinding device and a bookbinding method capable of surely binding saddle-stitched sheets and a cover sheet when a book is made by covering the saddle-stitched sheets arranged in a bundle shape by the cover sheet. SOLUTION: A cover binding means having an adhesive agent layer forming means for forming an adhesive agent layer at the rear end edge of the saddle-stitched sheets and a cover sheet feeding route for feeding the cover sheet to a processing stage and forming the cover sheet along the rear of the saddle-stitched sheets, a milling means for polishing the rear stitched surface of the cover sheet, and a control means for controlling the milling means and the cover stitching means are disposed on the processing stage. The milling means is disposed on the processing stage or the cover sheet feeding route. The control means so controls that, after the rear stitched surface of the cover sheet is polished by the milling means, the saddle-stitched sheets are bound to the rear stitched surface of the cover sheet.
