A method of com fractionation wherein the resulting high starch concentration endosperm is subsequently used for ethanol production or dry milling is described. The method includes: providing substantially cleaned corn kernels, tempering the corn; screen processing to properly size the com fractions; density separation of the primary fractions; rolling and/or screening the products to produce three main fractions consisting of high starch Endosperm, high oil Germ and high fibre Bran.
