<P>PROBLEM TO BE SOLVED: To provide a vacuum cooling machine for uniformly cooling rice balls formed in a warm condition in a short time with a simple construction. <P>SOLUTION: The vacuum cooling machine has the following construction and mechanism: Rice balls 3 as to-be-cooled objects are placed on a disc-shaped plate 4. Above the plate 4, a dome-shaped lid 7 opened downward is set. By vertically moving the plate 4 by a vertical movement apparatus 5, the lid 7 can be opened/closed for the plate 4. In the condition of the lid 7 being closed on the plate 4, an airtight cooling space 10 is formed inside and can be put to reduced pressure at a specified level by a vacuum unit 11. After pressure reduction, the pressure of the cooling space is returned to the atmospheric pressure through vacuum release by a pressure-restoring line 18.
