PROBLEM TO BE SOLVED: To provide new type process cheese having smooth and excellent melting feeling in the mouth different from conventional process cheese. SOLUTION: The method for producing the process cheese comprises adding to natural cheese molten salt comprising phosphate (sodium salt or potassium salt) and/or citrate and 0.4-10 wt.% of polyglyceryl fatty acid ester with HLB≤8 and an iodine number of≥45 (preferably≥80 wt.% of fatty acid is oleic acid) based on protein, heating, stirring and melting the product. The process cheese has further smooth melting feeling in the mouth compared with conventional process cheese through using a specific emulsifier, and new excellent palate feeling and physical properties which have hitherto been never obtained.
